Formulated by Donnelly and Baignet, this formula was later modified by the reduction of nalidixic acid from 40 to 20 mg/L and the medium is recommended by the U.S. Department of Agriculture Food Safety Inspection Service that states the first step of a two-part enrichment procedure for the recovery of L. monocytogenes from meat products. L. monocytogenes is a common contaminant in raw milk, meats, vegetables, sea food and in food processing environment.

Selective: acriflavine and nalidixic acid are antibiotics, which inhibit growth of gram-positive organisms, yeast and gram-negative organisms respectively.
UVM Modified Listeria Enrichment Broth contains peptone, beef extract, yeast extract and sodium chloride that act as sources of essential nutrients and maintains osmotic equilibrium, respectively. Phosphate compounds in the medium serves as buffers.
