Traditional methods to monitor quality of foods and animal feeds tested for the presence of coliforms as indicator organisms. Mossel et al. expanded on these traditional methods by examining food products for all Enterobacteriaceae including glucose-positive, lactose-negative, and gram-negative bacilli (e.g. Salmonella). Early formulations contained bile salt variations that inhibited some indicator organisms. EE Broth Mossel contains purified ox bile (oxgall) instead of bile salts.
EE Broth Mossel is used for the selective enrichment of Enterobacteriaceae in the bacteriological examination of foods. It contains purified ox bile (oxgall) in place of bile salts and disodium phosphate to improve the buffering capacity of the medium and encourage early growth of indicator organisms.

Peptone provides nitrogen, carbon and sulfur compounds essential for bacterial growth. Dextrose serves as the energy source. Disodium phosphate and monopotassium phosphate act as buffering agents. Brilliant green and oxgall are selective agents which inhibit gram-positive organisms.
